Quick Curry Rice

Ingredients

1/2 cup onion; finely chopped
1 clove garlic; grated
1/2 tsp ginger; grated
1/2 tsp turmeric
1 tsp curry powder
1 cup basmati rice; Texmati brand
1 3/4 cups chicken stock; or water
1/2 tsp salt
1/2 cup frozen peas

Directions

1. Heat a tablespoon of oil in a medium-sized pot. Add the onion and saute until soft and translucent.

2. Add the garlic, ginger and spices and cook for 30 seconds.

3. Stir in the rice then pour in the stock and season with salt.

4. Bring to a simmer, cover with lid and allow to simmer for 15 minutes.

5. Stir in the peas. Remove from heat, cover with a lid and leave for 10 minutes.

6. Once cooked, fluff with a fork, season to taste and serve.
