Ingredients
1/2 lb bacon
3 medium onions; chopped
2 cups brown sugar
1/4 cup mustard, yellow; prepared
1/4 cup maple syrup; or molasses
56 oz pork & beans
Directions
1. Fry all but 3 strips bacon until crispy. Remove to paper towel. Crumble bacon when cooled.
2. Remove all but 1 tablespoon of bacon grease from pan and stir in the chopped onion and saute until clear, stirring every now and then. When onion is ready stir in brown sugar and cook on high another minute or two until the mixture is bubbling. Add mustard and maple syrup and stir to blend well. Turn off heat.
3. Combine beans, crumbled bacon, and sauce mixture in a large (9 x 14 x 2) baking dish. Top with strips of raw bacon. Bake uncovered at 350F for an hour or until the bacon is done and the dish is bubbling and the liquid has cooked down some. Keep an eye on them so they do not cook until dry.
Serve hot or cold.
