Ingredients
1 lb pork tenderloin
1 medium egg; slightly beaten
1 tbsp water
1 cup panko bread crumbs
1/2 tsp salt
1/2 tsp onion powder
1/4 tsp garlic powder
1/8 tsp pepper
4 tbsp butter
4 tbsp olive oil
Directions
1. Cut pork diagonally into 1/2 inch thick slices. Place a piece of plastic wrap over a slice of pork and lightly pound to 1/4 inch. Repeat for remaining slices.
2. Mix egg and water in a breading pan.
3. Mix panko crumbs, salt, onion powder, garlic powder and pepper in another breading pan.
4. Drag pork in egg mixture then coat with panko mixture.
5. Heat 12 inch skillet over medium heat until hot.
6. Keep about 1 tablespoon each of butter and olive oil in skillet while frying pork and cook about 4 minutes on each side or until done. Remove pork from skillet and keep warm while cooking the rest.
Note:
You can use canola oil in deep fryer set at 350F to cook pork.
