Ingredients
1-2 tbsp coconut oil; or vegtable oil or butter
1 cup onion; chopped
1 clove garlic; chopped
1 lb ground beef
1 1/2 tbsp curry powder
1 1/2 tsp salt
1/8 tsp pepper
1/8 tsp cinnamon
1/8 tsp ginger
1/8 tsp turmeric
14 oz diced tomatoes; canned
3 medium potatoes; cubed
2 1/2 cup peas; frozen
Directions
1. Heat oil in large pan.
2. Add onions and cook untill they start to soften then add garlic and cook for a few more minutes.
3. Add meat and cook thoroughly.
4. Stir in curry, salt, pepper, cinnamon,ginger and turmeric. Mix well.
5. Mix in potatoes and tomatoes to the pan and bring to a simmering boil. Reduce heat, cover and cook for 10 to 15 minutes or until potatoes are done.
6. Add peas and cook 3 to 5 minutes.
Serve alone or over rice.
