Sausage Gravy

Ingredients

4 oz breakfast sausage
3 tbsp butter
2 tbsp flour
1 1/2 cup milk
salt; to taste
pepper; to taste

Directions

1. Brown sausage in skillet breaking it up as it cooks.

2. Melt butter in a 1 to 1 1/2-quart heavy saucepan over moderately low heat, then whisk in flour and cook roux. Cook until color is a medium tan.

3. Whisk in milk until there are no clumps. Continue to simmer, whisking occasionally, until you have the consistency that you want, approx 5 minutes

4. Remove from heat.

5. Add sausage and stir together. Salt and pepper to taste

Serve over biscuits or toast.
